Baby Leeks are mild enough to eat raw says Specialty Produce. Due to their well textured exterior, they can withstand long cooking periods. Baby Leeks are perfect for classic homemade meals such as pies, tarts and hearty warm soups. They also make for a great salad or pizza ingredient. Either roast, blanch or grill with olive oil or butter to impart a rich onion smokiness. Furthermore, baby leeks pair well with cream sauces, cheese, bread and other baby vegetables. They also compeiment a variety of meats including poultry, grilled or smoked white fish and lamb. In addition, they pair perfectly with fennel, garlic mustard, tomatoes and vinaigrettes.

Taste: Baby Leeks are crisp and crunchy when raw and develop a melting quality when used in cooked preparations. All parts of the Leek are entirely edible, even the roots! Furthermore, they are consistently moist and tender, with a much sweeter flavour than their mature plant can offer.
