Butterfly sorrel flowers are utilised as a colourful garnish for both sweet and savoury dishes. The flowers pair well with many dishes including seafood, pork and poultry. They can also be used to make cocktails, combine with honey or crushed with sugar. The petals can also be removed individually and placed as a topping on cupcakes or tarts. The colours are best preserved when used raw. Its colour offers contrast and gives a mild lemony flavour to plates when used as garnish. Butterfly sorrel edible flowers compliments shellfish as well as vegetable and fish dishes. Add to sauces, soups, greens, beans, or peas as a replacement for lemon.
